Things I Am Going To Miss: Wild Pigs

Preferably with käsespaetzle (cheese noodles) and preiselbeeren (wild cranberries).

Why is this wildragout (wild boar stew) so freaking good? Because the pig ran around in the Alpine woods for a year or two, happy as, well, an ornery pig in the woods, before it was shot by an experienced hunter and served up on a plate. To me.

Thank you, wild, happy, ornery, pigs. I’m going to miss you.
